Ingredients
- 1⁄3 cup 80 ml unsweetened coconut milk or coconut cream, canned
- 2⁄3 cup 160 ml water
- 1 oz. 28 g frozen spinach
- 2 tsp 2 tsp grated, fresh ginger
- 2 tbsp 2 tbsp lime juice, divided
- grated fresh ginger, for serving

Making low carb simple
Instructions
Add the coconut milk or coconut cream, water, spinach, and grated ginger into a blender. Also, add half of the lime juice. Increase the amount of lime juice to taste, after blending together until smooth.
Sprinkle with some grated ginger and serve. So tasty!!
Tip
Prep your smoothies ahead of time to ease the morning rush. They last in the fridge for up to 2 days. Use an air-tight lid and remember to shake well before drinking!

Watch out, I accidentally used cream of coconut instead of coconut cream. Didn't realize my mistake until afterwards when I got a huge blood sugar spike. Coconut Cream: 3 TB = 3 g carbs, Cream of Coconut: 3 TB = 31.5 g carbs. ? I'll be checking my food labels MUCH more carefully from now on. ?

I believe that cream of coconut has added sugar and is processed. One brand I can think of is coco lopez. Check the can to make sure your coconut cream is just that - coconut cream.

I'm a bit cautious of fresh ginger in drinks due to some disappointments in past recipes but this was delicious and perfect for a summer morning.
I used fresh baby spinach and fresh ginger and added some avocado and a little bit of stevia, and those lime, ginger and sweet flavours mix together perfectly and just pop! The avocado and coconut cream provided the perfect amount of creaminess and with a bit of ice, it was really refreshing. Thanks for a great recipe!9

Cream of coconut is used for pina coladas. Coconut cream is in the cooking isle next to coconut milk usually, and most brands usually carry both of those cooking ingredients. Thai Kitchen is the most common brand I've seen.

ooh I love you all, but this was terrible. The lime took over :( I followed the recipe, shoulda add something else I guess. Please revise this recipe. Had to swallow it cause I was hungry!

I'll try fresh ingredients and frozen! The GINGER will be the most important and healthy ingredient... I have been using GINGER for 3 Years straight in just about every meal... Best probiotic... I have had as much as a sniff in that time... I HAD terrible sinuses for years.

I'm not entirely sure, but you may want to try adding less water or perhaps adding more spinach.

This is wrong, I looked it up on Fannys page there should be an avocado per serving and 100 ml coconut per person. 150 ml water etc

Our listed nutrition is accurate for the measurements given. This is a small serving size. If you wish to have 2 servings, just double each of the macros listed.
