Mexican scrambled eggs (or any fried mexican) are much tastier with corn oil instead of butter; we do not fry in butter. I once tried it and couldn't' figure out what was wrong with my eggs-- tasted funny, not as good-- it was the butter and also saffron oil (ugh on this one. CORN OIL!!

Really enjoyed this dish, I substituted the jalapeños for green capsicum and added a sprinkle of chilli powder. Loved the colours!

These eggs are delicious! The pickled jalapeño gave them just a little heat and a really nice flavor (I don’t usually use pickled jalapeños). I served them with an avocado on the side, as suggested. It was a perfect combo. Kerrygold butter worked perfectly for sautéing the vegetables and cooking the eggs. No need to use any oil.

Corn oil is not recommended. For more information, check out Dr. Eenfeldt’s article on vegetable oils (on diet doctor.com). Search for “Cooking with Vegetable Oils Releases Toxic Cancer-Causing Chemicals.”

Have made this now three times for my husband and he absolutely loves it! I use dripping (beef fat) and also a little bit of butter to cook all the things in. Oh and add a bit of ground cumin to it! Scrummy!!!

I don't eat egg yolks. Is this recipe still as healthy without the yolks?

You can cook an egg with olive oil. Eggs can and should be cooked at a very low temperature so it shouldn’t hit a smoking point.

PLEASE could we have grammes of butter and millilitres or whatever rather than tablespoons the size of varies from country to country. You have them mixed up even in the metric online! Also.this for 3 people asks for 41/2 eggs - ugh? I suppose the answer 4 large - or 5 small ones? We get eggs in five sizes in Britain!!! 😂

I was wondering what the cholesterol, sodium, and iron are per serving because the nutrition panel doesn't state them.

If you are interested in that information you can look up the ingredients in the USDA database; those aren't numbers as important on keto.

Yes, sometimes when scaling recipes away from the default number of servings, it can end up with some interesting measurement amounts! Since this is just scrambled eggs, using 2 will be no problem.

Is the pickled jalapeño whole or sliced?
It would be 2 whole jalapenos, but you could also diced up slices if needed.
