These Hurricane co*cktail Jello Shots are the gelatin version of the classic co*cktail.

I had never heard of a hurricane co*cktail until college.

Which is odd if you own my cookbook, and read it, then you know that my dad had me being a mixologist at age 13.

But a hurricane was not in my wheelhouse.

Cantaloupe daiquiri?

That was, unfortunately for the taste testers, in my wheelhouse.

College is usually when most people get introduced to mixed drinks.

I mean, in high school, if you did drink it was usually warm beer someone stole from their parents.

Or something like banana schnapps that they knew their parents wouldn’t even notice was missing.

*Note: Not promoting teen drinking. 🙂

Down by the ASU (Arizona State University) campus was a Fat Tuesday’s.

It’s a bar in which it’s theme is always Mardi Gras.

Which is a place that turns a lot of drinks in the frozen slushies.

And half their drinks have really high proof alcohol so it was more bang for your buck.

I assumed for a long time that the co*cktail got its name after the storm.

You know, like, this Hurricane co*cktail will mess you up just like a real hurricane.

The drink is from New Orleans and they get hurricanes.

Except that it’s named after the glass it gets served in.

And the glass gets its name from a lamp.

A lamp.

I like my interpretation better.

I made my shots layered.

If you are going to make them layered then you are going to need to get a food scale if you don’t have one.

And if you don’t have a food scale you really should.

You should have one though, especially if you bake.

The scale is necessary because you will need to divide a 6 oz box of gelatin into 4 oz and 2oz.

I also divided up the rum.

The bottom layer has light rum and the top has dark.

You can mix the two together and have them in both layers if you want.

Passion fruit juice may sound exotic but you can usually find it at the grocery store.

Do they have to be in layers?

No.

You can have it all mixed together.

If doing that you will have 3 cups of passion fruit juice divided.

Bringing 2 cups to a boil and save the remaining cup to be cold.

Place 6 oz of orange gelatin in a large bowl and then pour in the boiling two cups of passion fruit juice.

Whisk until the gelatin dissolves.

Then add the remaining passion fruit juice, light rum, dark rum, lime juice, and grenadine.

Pour into the shot cups and chill in the fridge for at least four hours.

Things to remember when making Jello Shots.

When throwing a party, you’ll probably want to prepare 4-6 Jello Shots for each guest.

This batch uses 6 ounces of gelatin and so you will get around 18-20 Jello shots.

If doing a half recipe and only using 3 ounces of gelatin you will only get 8-10 Jello shots depending on how you pour.

If using a garnish, don’t place the garnish on the jello shot until just ready to serve.

Ingredients

  • For the Bottom Layer:
  • 2 cup passion fruit juice, divided
  • 4 oz Orange Jello (you will have to measure it out using a food scale)
  • 2/3 cup light rum
  • 1 TBSP lime juice
  • For the Top Layer:
  • 1 cup passion fruit juice, divided
  • 2 oz Orange Jello
  • 1/3 cup dark rum
  • splash of lime juice
  • 1 TBSP grenadine
  • red food coloring if desired

Instructions

  1. For the Bottom Layer:
  2. Bring1 cup passion fruit juice toa boil.
  3. Emptygelatin powder into a large mixing bowl and add the boiling juice.
  4. Continue stirring for two minutes or until the jello is completely dissolved.
  5. Add in the cup of coldpassion fruit juice, lime juice, and light rum.
  6. Stir until mixed and pour into 2oz. cups filled 1/2 way up.
  7. Place in fridge and let set up for an hour.
  8. After and hour make the top layer.
  9. Bring1/2 cup passion fruit juice to a boil
  10. Emptygelatin powder into a large mixing bowl and add the boiling juice.
  11. Continue stirring for two minutes or until the jello is completely dissolved.
  12. Add in the remaining passion fruit juice, dark rum, lime juice, and grenadine.
  13. Stir until mixed and pour on top of the bottom layer up to the top of the cup.
  14. Do this to all the remaining jello shots.
  15. Let set up in the fridge for at least four hours.
  16. Garnish with maraschino cherries if desired.
