If you haven’t noticed, I’ve been on a bit of a sweet kick lately. A few nights ago I felt a strong urge to make these peppermint chocolate cookies when I got home from work. I saw the recipe in Rachael Ray’s EveryDay magazine and fell intensely in love. And that was before I bit into them.

Then. I bit into them…

The gates of heaven opened up, music began to play, I danced in perfect circles, until…I needed another bite. This went on for the first three cookies, when I realized that I needed to stop. I had to dig deep within myself to find every ounce of self-control. I could have eaten both pans. All 24 cookies. I’m not kidding.

HOW TO MAKE CHOCOLATE COOKIES WITH A PEPPERMINT SURPRISE!

(adapted from: Rachael Ray’s EveryDay magazine)

A York Peppermint patty is an amazing addition to a cookie, taking it from yum to YUM!

STEP 1

In a large bowl, using an electric mixer, beat together on low speed:

1 1/2 cups flour

1/2 cup unsweetened cocoa powder

1/2 cup granulated sugar

1/4 cup light brown sugar

1 teaspoon salt

1/2 teaspoon baking soda

STEP 2

Beat in:

1 1/2 sticks unsalted butter, slightly softened

1 egg

Turn out the dough onto a large piece of plastic wrap and flatten into a disk; completely cover to seal the dough in. Refrigerate until firm, about 1 hour.

STEP 3

Preheat your oven to 350 degrees F. Line 2 large baking sheets with parchment paper. Working with approximately 1 tablespoon of dough at a time, use your fingers to evenly encase each of 24 miniature peppermint patties (unwrapped and chilled) with the dough.

Place the balls of dough on the prepared pans and smooth the dough with your fingers, if needed.

STEP 4

Bake until just firm to the touch, about 15 minutes. Remove the pans from the oven and let cool slightly. Transfer to a wire rack to cool completely.

In a small bowl, microwave 6 ounces of white chocolate chips on high in 30-second bursts until it is creamy and completely smooth when stirred.

Using a large spoon, drizzle the white chocolate over the cookies. Let cool completely before serving or storing.

Be prepared to get a glimpse of heaven upon biting into these cookies. Just wait, you will see what I mean!

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup unsweetened cocoa powder

  • 1/4 cup light brown sugar
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 1/2 sticks unsalted butter slightly softened (6 ounces)
  • 1 egg
  • 24 miniature peppermint patties such as York, unwrapped and chilled
  • 6 oz. white chocolate chips

Instructions

  • Using an electric mixer, beat the flour, cocoa powder, both sugars, salt and baking soda on low speed. Beat in the butter, then the egg. Turn out the dough onto a large piece of plastic wrap and flatten into a disk; seal. Refrigerate until firm, about 1 hour.

  • Preheat the oven to 350 degrees F. Line 2 large cookie sheets with parchment. Working with 1 tablespoon of dough at a time, use your fingers to evenly encase each peppermint patty with dough. Place on the prepared pans and smooth the dough with your fingers. Bake, switching the pans halfway through, until just firm to the touch, about 15 minutes. Remove the pans from the oven and let cool slightly. Transfer the cookies on the parchment to a rack to cool completely.

  • Meanwhile, in a small bowl, microwave the white chocolate on high in 30-second bursts until creamy when stirred. Using a large spoon, drizzle the white chocolate over the cookies. Let cool completely before serving or storing.

    I made these cookies and after reading the comments I was very worried about how the difficulty level. I must say I thought it was fairly easy! I rolled the cookies around in my hands and mushed them gently and they looked very pretty. I'm not convinced that the dough needs to be refrigerated, I found it significantly easier to get the dough around the patties when it had been warmed up with my hands. I will mention be very cautious heating up the chocolate chips for the drizzle, I overcooked them and they ended up burning in the microwave even though I did 30 second bursts. 15 seconds probably would have been better for my microwave.

    The cookies were a HUGE hit at my work party, my boss tried to snag the entire container of them! I have gotten multiple requests to make them again. I spotted mint chocolate chips at the store so next time I make them I think I'll try those for the drizzle and see how it turns out. This is a great recipe, it is a little time consuming, but it was also fun to make and looked great! Thanks for sharing!

    I did make the cookies again and they came out beautifully. (Maybe my new stand mixer helped.) I used the Yorks, frozen and lowered the heat by 25 degrees. I made a mess trying to drizzle the white chocolate on top but that didn't matter to the consumers!

    Thanks for the input, Jessica! The gloves are a great idea and I hadn't tried off-brand patties, so thanks so much for adding your thoughts!! I didn't have any leakers at 15 minutes, but I suppose ovens can vary slightly.

    @Jessica Martin. I wish I had read your comment before trying these yesterday afternoon. I used the off brand peppermint patties and had such a cookie FAIL I thought I had messed up in the ingredients or something and read and re-read the recipe because they looked nothing like the beautiful cookies that were featured in Rachel Ray's magazine I just got. I will not let this mess get me down and I will try it once again with York and not bake the full 15 minutes. Thanks for the hints!

    I made these for my holiday cookie exchange this year and have a few tips. Don't preheat your oven until you've made about half of the cookies. They take quite a while to make. Use some latex gloves (like the medical kind) when working with the cookies because the dough doesn't stick to them and it makes working with the dough easier. I rolled out 48 balls about 1tsp each and then sqwished them into disks and put one on top and one under the patty and then sealed up the seam with my fingers. Then I rolled the cookie around in my hands a little to make it pretty. You MUST use York brand patties. Tried this with the off brand and they melted during the baking process. It was a mess. Also it's better to take them out a little earlier than 15 min. I suppose it depends on your oven but I got a few leakers (where the patty melted out) if I went to 15 min. If I took them out at 13, I got no leakers.
